This delicious Keto Shrimp Alfredo Tofu Shirataki noodles saves a TON of carbs and is absolutely delicious.
And honestly, you can barely tell the difference with swapping the Shirataki noodles for the pasta noodles!
This recipe makes 1 to 2 servings, so based on 2 servings it comes out to only 7 net carbs per serving!
Keto Shrimp Alfredo
So, I’ve been eating low carb/keto for over a year now.
As I’ve said before, eating low carb is hard!
I miss rice, chips, potatoes, bread & pasta like nobody’s business!
BUT, how lucky are we to live during a time when people are so creative with their foods and can make pretty darn good substitutions?
These substitutions make eating keto and low carb a lot more bearable for sure.
So, when I discovered Shirataki noodles, I had to try them!
Actually, my friend Riri with Home Cooking Solutions has introduced me to Shirataki noodles whenever she cooks low carb meals for me.
Turns out, I really like them!
So I decided it’s time for me to cook with them myself and make this low carb shrimp alfredo recipe {inspired by Hungry Girl}.
Is there a difference between Shiratkai Noodles & Tofu Shirataki Noodles?
Absolutely!
I’ve personally never tried the straight-up traditional Shirataki Noodles {also called Miracle Noodles}.
However, from what I’ve read and heard, the texture is different.
Whereas Shirataki Noodles have a snap to them when you bite them, the Tofu Shirataki Noodles are somewhat chewier.
The overall consensus is that the tofu variety is a lot more like real noodles.
In addition, Tofu Shirataki Noodles:
- Contain Soy
- Are 10 calories per serving vs. 0 calories for regular shirataki noodles
- Have 3 grams of carbs vs. less than 1 carb for regular shirataki noodles
- Contain 2 grams of fiber vs. 0 fiber in regular shirataki noodles
- Are sold in these forms: spaghetti, fettuccini, angel hair, & macaroni
Clearly, the winner for me is the tofu variety.
How To Make Keto Shrimp Alfredo?
Right? It really sounds so fancy and complicated.
But, it’s so darn easy and takes no time at all to get it on the table!
Keto Shrimp Alfredo Ingredients
The ingredients for this low carb recipe are:
- Tofu Shirataki Fettuccine Noodles – These are such an awesome low carb alternative to regular noodles. You can get them on Amazon or in your local grocery store.
- Shrimp – Shrimp really enhances this delicious alfredo recipe! Mmm!
- Mushrooms – I love any excuse to add mushrooms to a recipe!
- Sour Cream – Sour cream is a must when you’re making a creamy sauce.
- Lemon Juice – If you have lemons, you can juice them. If not, you can use the ReaLemon bottled lemon juice.
- Minced Garlic – minced garlic is always handy to have in the fridge for dinner recipes.
- Laughing Cow Creamy Swiss Cheese – I love having this cheese on hand for spreading on crackers, dipping raw veggies in, and adding to recipes.
- Parmesan Cheese – Again, another cheese that I always keep on hand for recipes!
Step 1: Rinse Tofu Shirataki Noodles In Colander
I used paper towels to pat the noodles dry but it wasn’t very efficient, so I got a clean dish towel and used that instead.
Take note that you want to gently pat them dry, not smoosh the noodles.
Step 2: Cook Shrimp & Mushrooms
Pro tip: I used frozen pre-cooked shrimp.
However, it wasn’t the best option for this recipe.
Indeed, the best option is to use fresh, raw shrimp.
Cook the shrimp and mushrooms in a large skillet {I prefer the stainless steel skillets without the non-stick coating} through for about 4 minutes.
Then set them aside on a plate.
Step 3: Cook & Stir Noodles, Sour Cream, Lemon Juice, Garlic, & Cheese Wedge in the Skillet
Make sure you spray the skillet again with non-stick spray.
Then add the noodles, sour cream, lemon juice, garlic, and cheese wedge.
Cook & stir well until the cheese is melted and the noodles are evenly coated.
This should take around 3 minutes.
Step 4: Stir in Parmesan Cheese, Shrimp & Mushrooms
Finally, add in the cooked shrimp, mushrooms and parmesan cheese.
Then blend well, stirring for about 2 minutes until everything is heated through and ready to eat!
How Bad is Alfredo Sauce For You?
Um, it’s pretty bad!
That’s why I love this “skinny” alfredo sauce!
It’s still creamy and I feel so much better eating it, knowing that I’m not breaking the carbohydrate bank.
Plus, it’s just as good, in my opinion and won’t make me feel like I just want to go straight to bed like regular starchy pasta makes me feel.

Keto Shrimp Alfredo Recipe
Keto Shrimp Alfredo with Tofu Shirataki Noodles
Ingredients
- 1 package Tofu Shirataki Fettuccine Shape Noodles
- 8 ounces Shrimp, raw, peeled, deveined, tails removed
- 1 cup Mushrooms, sliced
- 1 tsp Sour Cream
- 1 tsp Lemon juice
- ¼ tsp Garlic, minced
- 1 wedge Laughing Cow Creamy Swiss Cheese
- 2 tsp Parmesan Cheese, grated
- Salt, to taste
- Pepper, to taste
Instructions
- Pour noodles into a colander. Rinse and drain well. Then thoroughly pat the noodles dry.
- Spray a skillet with non-stick spray and heat to medium heat. Then add the shrimp and mushrooms & cook through for approximately 4 minutes.
- Remove shrimp & mushrooms and set aside.
- Re-spray the skillet & add the noodles, sour cream, lemon juice, minced garlic, & cheese wedge.
- Cook and stir well for around 3 minutes, until the cheese is melted and the noodles are evenly coated.
- Add parmesan cheese, shrimp, and mushrooms. Cook & stir for around 2 more minutes.
- This recipe serves 1 to 2 people, depending on your appetite!
